Honey Soy Chicken Drumsticks



This is an easy weeknight dinner. The recipe calls for 20 minuites of marinating time but you could marinate the night before or if you’re really short on time just combine ingredients with chicken and put straight into the oven.


This recipe serves 2 people you could easily double the recipe for 4. If you are doubling the recipe I would suggest still only using one clove of garlic as it can be quite strong. If you are tripling the recipe (12 drumsticks or more) you may need to add an extra 10 minutes cooking time. To test if the chicken is cooked pierce the thickest part of the chicken with a fork and the juice should be clear.

4 skinless chicken drumsticks
1 tbs honey
6 tbs light soy sauce
1 clove garlic – crushed and chopped

Combine honey, soy and garlic to make marinade. Marinate chicken in a covered container/bowl for 20 minutes. Preheat oven to 180 °C. Transfer chicken to baking dish and cover with foil. Bake for 25 minutes. Remove foil and baste chicken with marinade from baking dish then return to oven uncovered. Bake for a further 10 minutes.
Serve with salad or over couscous sprinkled with sesame seeds (extra points).
