Healthy Sweet Potato and Bean Chilli




This is a really easy one pot chilli. There are a few ingredients but it is relatively simple to make. I love the combination of the chilli and sweet potato and you defiantly don’t miss having meat on your plate with the chunky potato and bean combination.



 I originally made this with two whole jalapenos and gosh was it hot! I’ve toned down the recipe below but if you like it extra hot add more chilli, but taste as you go.


It can be served as is or with a dollop of plain yogurt, over rice or with homemade tortilla chips.
This recipe freezes well so i like to make extra for lunches. You could also try using leftovers as a vegetarian enchilada filling, drizzling the soup-sauce over the top with low fat cheese.

Homemade BBQ sauce



This Lightened up BBQ sauce is a great alternative to the high sugar store bought versions. My version uses Worcestershire sauce to add a smokey flavour and balsamic vinegar for bite. Not only does it make a good dipping sauce but it is good for basting over meats on the BBQ such as steak or pork. If you use it for basting up to ¼ of the final mix is only 1 ProPoint / 51 calories.

Make Your Own Pizza

Pizza Your Way


My group of friends consists of dieters, vegetarians, full on meat eaters and a chilly addict so when it comes to entertaining food choice is usually a much debated decision. These recipes came about from a need for a no fuss dinner for several picky eaters (myself included).

This is a great way to feed a large group of people or the picky eaters in your family. It’s also a fun way of getting the family involved in dinner time. It requires a little preparation beforehand (chopping ingredients), but comes together well. Prepare all the ingredients and lay them out and let everyone choose their favourite toppings then stick each pizza under the grill for a few minutes (2 – 5 minutes) until the cheese is melted. Alternatively make them yourself and have them ready for your guests / family at dinner time. You could also use the oven to cook the pizza – 10mins at 180°C fan forced, just enough to crisp up the base and melt the cheese.

This isn’t a recipe more of a list of tasty ingredients that work well together. You can use what you have on hand from the pantry of fridge. Some basic ingredients for pizza are cheese pizza sauce sliced meat and some vegetables.

Mountain Bread "tortilla" chips

I decided to make my own chips for dips and snacks but instead of using tortilla's I tried mountain bread! They came out very light and crispy; I was very impressed. The only flavouring I used was salt but you could use pepper, chilli flakes, lime, garlic, cumin, vinegar or dried herbs. Be careful though, as they can burn easy if you leave them in the oven to long.
